Our Chefs

Roberto Cardazzo, Executive Chef

Surrounded by family restaurant business, at age 14 Roberto Cardazzo, born in Venice, Italy on June 27, 1966, decided to enroll in Friuli Culinary School in, Gulia, Venice and follow the career of chef. Chef Roberto, since the ending of his schooling, has worked in several hotels in Venice including the Hotel Boston and Hotel Ala. He has also had a variety of positions, such as Garde Manager, pastry chef, bakery, Chef de Partie, customer service and the selling of glass from the factories in Murano Island where the development of this worldwide famous Italian craftsmanship takes place.

Chef Roberto Cardazzos true deep passion for the culinary arts did not begin until he started working at the Hotel Hungaria Palace where he decided to enter into more depth his choice of profession. His passion and commitment led him to go through all the kitchen areas and learn different types of food as well as international cuisine such as French, Austrian, Asian to name a few.

In 2006 Roberto came on vacation to Los Cabos in Mexico. His visit sparked the desire to opening a restaurant in Cabo San Lucas, where he had fallen in love with the beautiful area that fulfilled his love for the ocean and fishing. Chef Roberto opened the Casanova Restaurant, the first authentic Venetian / Italian restaurant Cabo San Lucas. The restaurant was very famous for its elegant atmosphere and superb and refined dinning. His specialty was the house pasta and Chef's specials. After 3 years the restaurant reaches such success an opportunity to sell the restaurant was presented and he took advantage of it. Chef Roberto decided to take some time off and later opened Restaurant Venezia, also in Cabo San Lucas. A beautiful restaurant, faithful to his excellent Italian style, was a success, but due to unforeseen economic crisis that would spread the world over, the restaurant suffered a very low occupancy so Chef Roberto decided to close and move forward with his career.
After leaving his work in the Hotel each day, Chef Robert would work in the evenings in the Riviera Restaurant in San Marco, Venice, where he is a partner and chef with his sister. Its location is one of the most privileged in Venice with a beautiful view of the island of San Giorgio Maggiore and the Giudecca Canal from its large terrace. Given that the restaurant is below the Vivaldi Hotel and next to port of the cruises, it has many visitors from around the world. The restaurant has celebrated 35 years of success and will for many more years.

Now you can find the Chef Roberto Cardazzo in Villas del Palmar at The Islands of Loreto, thanks to the VP of The Villa Group Resorts, Pual Moreno, who brought him to the hotel to fill the position of Executive Chef of the Resorts restaurants, where he enjoys even more his love for the ocean and fishing in the amazing setting of the mountains and Cortes Sea. His fame has spread from around the Baja Mexico, California, USA, even to New York. His specialty is to create an unforgettable dining experience for all its customers by diving himself for the famous chocolate clam in Ensenada Blanca Bay and preparing en different styles, outings with guests to the best fishing spots and preparing the catch for dinner, a romantic dinner in the pool or on the beach with a bonfire. To Chef Roberto it is very important that his cuisine evolves and improve every day to satisfy the palate and tastes of his customers, of which also evolve and change. His secret is to work with the heart, innovation and the use of fresh quality products.

Edgar Santos, Sous Chef

Born in De Autlan City, in the state of Jalisco on August 16th, in 1977. I grew up in the Guadalajara, Jalisco, where I started out as a teenager and with the dream of earning an income; I grew up in the family restaurant.

In 1995 I moved to Colima City in Colima; place where I studied the Degree in Industrial Design in the University of Colima, campus Coquimatln, concluding my studies in the year of 2000. Once I graduated I became part of the team of "Los Naranjos Restaurants"; which is known for its traditional-regional Mexican cuisine. And it was then when I discovered my true and passionate dedication for the flavors and aesthetic of the cuisine. In a certain way, applying the interpretation of the design techniques into the kitchen.

In June of 2004 I became part of the Hotel world (business class) in the Posadas de Mexico Group, (Fiesta inn and Fiesta Americana) as Executive Cheff and Food and Beverage Manager. This company offered me the opportunity of updating myself in different areas, (Coaching, Professionalism, and Operation Guarantee). Also gave me the opportunity to train and prepare myself in schools like: "Instituto Superior de Gastronoma Lomas Verdes" and "La Condesa" in Mexico City.

In March of 2011, I was given the opportunity to form part of the great work team that is Villa Group, as Operational Sous Chef in the opening of the Villa del Palmar at the Island of Loreto, in Baja California Sur. Where Im still living the great experience of demonstrating my specialty in the fusion of the Mexican Food.

The calm waters of the Sea of Cortes make for a delightful day of fishing, amplified by the Islands of Loreto sitting within the 2,065 square kilometer Loreto National Marine Park, which is federally protected and prohibits commercial fishing and monitors fishing activity.

Scuba

The Islands of Loreto, five beautiful and protected islands, offer amazing diving. Whether you are a beginner or advanced diver, you will fall in love with the volcanic formations, reefs and multitude of tropical fish and invertebrate life that abound in this area. Certified divers can experience different trips that will take you to our local sites, Danzante Island and the coast, Coronado and Carmen Island. Each island offers unique geology and underwater formations.

Whale Watching

If you visit the Islands of Loreto between mid-December and end of March its likely that at some point during your stay youll be treated to the sight of whales spouting off shore. Many whales that feed in northern waters migrate south each year. At the end of their 5,000 mile journey from the Bering Sea, hundreds of Pacific gray whales congregate each year in the protected, shallow lagoons of Magdalena Bay to mate, bear their young and pass the winter months before returning north in the spring. The grey whale is the most popular, however there are eight species of whales that visit Baja every year including orca, humpback, finback, sei, minke, pilot, gray and the worlds largest mammal, the blue whale. The Islands of Loreto are a great place to view these magnificent creatures. Gray whales are known to make a lively show, being naturally curious and social. The whales like to show off their young and oftentimes getting close enough to be petted.

Hiking

Several trails await your adventurous side and will lead you through the unique flora and fauna of Sierra de la Giganta including green and blue palms and ancient fig trees. There you'll see rare species of reptiles and birds. Many of the trails lead to hidden waterfalls and lagoons as if from a fairy tale.

Paddle Boarding

Stand-up paddle boarding, or SUP, is making waves. The sport, which has its roots in surfing, uses a board and paddle to scoot along the water, building strength and coordination. The sport is easier than surfing and can be mastered by most anyone. Some paddle boarders even do yoga on the water.

Stand-up paddle boarding is popular throughout Mexico, but the Islands of Loreto offer near-perfect conditions. Off-shore islands shelter the already warm, calm and strikingly blue waters where boarders may find themselves paddling by whales, dolphins, rays and other sea life.

USA Today Travel and Mens Journal Magazine recently named Loreto one of the Top 10 places for stand-up paddle boarding and Villa del Palmar at the Islands of Loreto is the premier location to indulge in this exciting activity. Read the full story.

Kayaking

The close proximity of the Islands of Loreto makes it an excellent place for Kayaking. Hundreds of miles of pristine shoreline with coves and secluded beaches await the adventure seeker who wishes to immerse in the beauty of Baja from the seat of a Kayak.

Our resort has a fleet of Kayaks available and ready for your magnificent kayaking adventure among the 5 Islands of Loreto beginning straight from our private beach. Day and multi-day excursions that can include overnight camping on Danzante Island provide ample opportunity for close up encounters with whales, rays, dolphins and sea lions.

Lessons are offered for those new to the sport.

There are so many things to do at the Islands of Loreto. A few to consider are:

Missions

Mission San Javier is a testament to the "discovery" of the region, as it was built by explorers and Jesuit priests Juan Maria de Salvatierra and Junipero Serra.

Mission of Our Lady of Loreto Concho born in 1697 and exists today as a testament to Loreto's deep-rooted history and spirit. Today, this historic mission also houses a museum where visitors can discover the history of the native people, the acts of the Jesuit missionaries and the colonization of Baja. The church, recently restored with its bell tower rising high above the center of town, is representative of the living history, roots and culture of Loreto.

Puerto Escondido

This port is the gateway to the Sea of Cortez. It is by far the largest natural marine port in Mexico, providing a safe haven for a multitude of boats and yachts of all sizes

Island-Hopping

There are five islands of Loreto: Coronado, Danzante, Del Carmen, Montserrat and Santa Catalina. They provide a wide variety of activities such as snorkeling, kayaking, photo safaris, trekking, flora and fauna and majestic scenery. A $25 Pesos permit fee for access to the Natural Reserve marine park is required to visit any of the Islands of Loreto.

Isla Coronado
A 30-minute boat ride away, guests will experience a wonderful day of adventure and relaxation in one of the most beautiful islands of Baja California Sur. Coronado is the ideal place for sunbathing on the beach, observing colonies of sea lions and dolphins, snorkeling, and much more.

Isla Danzante
A Loreto icon, Danzante Island features an amazing array of native plants, choral groups and a wide variety of marine species. It is the home of lovely beaches and a great place to enjoy diving, hiking or just relaxing in the sun on "honeymoon beach" .

Isla Del Carmen
Isla Del Carmen is the largest island in the Sea of Cortez and features amazing salt deposits, breathtaking beaches and caves waiting to be explored.

Isla Montserrat
Isla Montserrat is the perfect place for wild game viewing and snorkeling and features an abundance of trails for hiking.

Isla Santa Catalina
Santa Catalina boasts incredible natural beauty, gorgeous scenic views and a rich diversity of fauna.

Cave Paintings

Between Loreto and Bahia de Los Angeles lies the Sierra de San Francisco, home to a large collection of paintings, estimated to be 1,000 to 1,500 years old.

Museum of Loreto Missions

The Museum of the Missions of Loreto is open Tuesday to Saturday from 9 a.m. to 6 p.m. The entry price is $30 Pesos per adult. Here you can learn the history of the Jesuit missions in Baja California Sur through pictures, artifacts and legends displayed throughout the six-room museum.

Activities in San Javier

Mission San Javier located 32 km north of the majestic Sierra de La Giganta mountains, and features wonderful activities during the journey including swimming in some of the waterfalls and outbreaks of water, and watching the production of (and eating!) goat cheese and delicious guava paste. Once in San Javier, guests can admire the gothic architecture of the first colonial Jesuit Mission in Baja California Sur, and visit a 300-year-old olive tree that still bears fruit today.

Conception Bay Tour

Featuring the most well-known and photographed beaches in the region, visitors will see the beaches of El Requeson, distinguished by a thin strip of land that stretches from the mainland to two small islands; Coyote, with its famed palm tree in the center of the semi-circular beach; as well as El Burro, Santispac and more.
